Pearse Lyons Distillery was founded by the entrepreneur of the same name who made his fortune in the Kentucky-based animal nutrition science company Alltech. The distillery initially produced whiskey at the Lexington (KY) Distilling Co. as well as at the Carlow Brewing Co. in Ireland before opening its present distillery in the former St. James Church near the Guinness Storehouse in Dublin.
Talk about a multi-national flavor profile: this whiskey was developed by an Irishman who distilled it in Scottish stills that are located in Kentucky. We pick up molasses and vanilla as well as notes of allspice and cinnamon. It's very pleasant, without too much ethanol, and showcases a bit of citrus at the finish.
