FIRST SIP: Redbreast PX Edition
The Distillery
Hailing from the Midleton Distillery in County Cork, Redbreast requires no introduction for Irish whiskey aficionados. Redbreast exclusively produces single pot still whiskeys, including a 12 year, a 12-year cask strength (reviewed here), a 15 year (reviewed here), a Lustau finish (reviewed here), a 21 year, a 27 year, and numerous special releases.
The Whiskey
The Redbreast PX Edition is a non-age statement variety of Redbreast that is matured in bourbon and oloroso sherry casks before being finished in PX Sherry Hogsheads from Pedro Ximenez fortified Spanish wine. As a result, it is sweeter than the standard Irish whiskey; in fact, it may be the sweetest we've ever tasted and probably the closest to what you could accurately term a "dessert whiskey." That said, it's quite a treat. We taste candied yams, cherry pie, and spicy licorice, all infused into really good single pot still whiskey. We wouldn't drink Redbreast PX every day, but we'd be happy every day we did.
